Chipotle Adobo Sauce

Ingredients
- 2 small cans (about 14 oz) chipotle peppers in adobo
- 4 cloves garlic
- Juice of 2 limes (about 4 tbsp)
- 4–8 tbsp neutral oil (avocado, grapeseed, or light olive oil)
- 2–6 tbsp water, to thin
- Salt, to taste
Optional
- 2–4 tsp apple cider vinegar
- 1 tsp ground cumin
- Pinch of sugar (only if needed to soften harshness)
Method
Add all ingredients to a blender or food processor. Blend until smooth. Adjust acidity first (lime or vinegar), then salt. Thin with water until spoonable but not paste-thick.
Freezing
Pour into silicone freezer trays. Freeze solid, then transfer cubes to a freezer bag. Thaw and stir before using. Keeps well for several months.
